Paleo Recipies

 

Cinnamon Pecan Coffee Cake

Cooking Time: 25-30 min

Ingredients and Cooking Steps

  • 1/2 C Coconut Milk (or Coconut Milk Kefir)
  • 2 Eggs
  • 1/4 C Raw Local Honey
  • 1 tsp Vanilla
  • 2 C Almond Flour
  • 1/2 C Arrowroot Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt

Swirl:
2 tbsp Cinnamon
1/4 C Coconut Oil (or butter)
3 Tbsp Honey

Topping:
1/4-1/2C Chopped Pecans (or walnuts)

Preheat oven to 325. In separate bowls, combine dry cake ingredients and wet cake ingredients. Pour wet into dry and stir to combine. Pour into coconut greased 7X9 dish.
Combine swirl ingredients and dollop onto cake.
Using a knife, swirl in topping. Optional: Add on 1/4 C chopped pecans or walnuts.Place in preheated oven and bake 25-30 minutes until a toothpick comes out clean.

 

Chuck Wraps

Cooking Time: 5 minutes

Serves: 4

Ingredients and Cooking Steps

  • 1 pound of leftover chuck roast, shredded (any leftovers will work, actually!)
  • 1 large head of lettuce: romaine, butterhead, or redlead work well
  • 2 cups of your favorite salsa
  • 2 avocados: sliced, or cubed w/ the salsa

 

Separate whole lettuce leaves from stalk. Wash and fully air or towel dry. We don’t want no soggy lettuce!

While the lettuce is drying, shred and heat leftover chuck roast until warm. You can do this in the microwave or on the stove top for a few minutes.

Let each person create their own wraps by layering the meat, salsa, and avocado on top of a lettuce leaf. Gently wrap the lettuce to keep the filling from falling out, and eat with your hands. Enjoy!

 

Bon-Bon Chicken

Ingredients and Cooking Steps

  • • 2 Boneless Skinless Chicken Breast
  • Cucumber
  • 2 Gigantic tablespoons Smooth Almond Butter { I used a kitchen spoon… and they were HUGE!}
  • Between 1/2 – 1 Cup of Chicken Stock
  • 1/2 an Onion {yellow}
  • Red Pepper Flakes
  • Paprika
  • Salt + Pepper
  • Cauliflower Rice
  • Ghee {and/or coconut oil}

How to:
• Slice up your onion into thin-ish strips and toss it in a pan with some ghee and caramelize them {remember low & slow!}

• While your onions are happy in the ghee, cut your chicken into strips… whatever size you like.. I did kinda thin ones because that’s how it was made at the Chinese Food Place.

• Toss your chicken in a skillet that has some ghee in it, let your chicken start to brown.

• While your chicken is browning start to peel & Chop your cucumber… Cut them into really thin match sticks { I cut it half first, then did the match-stick thing}. I didn’t use the inside seeds of the cucumber, it’s a bit to soft for this dish, so it was sliced out. If you like that portion of the cucumber by all means add it in! Set aside your cucumbers.

• Probably about now {or maybe earlier}, you’ll want to flip your chicken over… and let it go to town on the other side {remember to stir your onions a bit!}

• Start rocking and rolling on your Cauliflower rice { Cut into florets, toss in food processor, give it a whirl so it looks like rice, dump in bowl, cover with plastic wrap, microwave for 3.5-5 Minutes {depending on how much you use}. Take out of microwave, add ghee, salt & pepper to taste!}

• When your chicken is done, add two heaping {at least} tablespoons of almond butter. Start to mix it as best you can. Slowly start to add some chicken stock in. I had filled up a mug about 1/2 way and would pour in some, stir, pour in some stir, until you get the sauce to be loose-ish. This part is total preference, if you like a “saucey” sauce then add a ton of stock, if you like pretty thick sauce, don’t add so much in….. When the sauce is where you want it, add in a dash of paprika, pinch of salt, pepper and crushed red pepper flakes to taste… I used ohh I want to say 3-4 teaspoons of it.

• Your onions should be done, so add those into the sauce + chicken. If this starts to mess with how loose / firm the sauce is adjust it with more stalk or almond butter.

• Then turn off the heat. Let it sit a minute while you divide up the cauliflower rice.

• At the last possible minute … as in right before you put it on your cauliflower rice, add in your cucumbers and give it a quick toss. {You want the cold – warm, crunchy – soft texture balance}.•Put it on your Cauliflower rice, and you’re done

Building a Strong Temple, a health and wellness study based on the "Truth"

Dietary Suicide? As a nation and as Church  we are killing ourselves slowly with food and lack of exercise. 9 of the top 10 causes of death are directly related to our diet and lack of exercise.  6 out of 10 adults are overweight,  this is a problem for our country in healthcare cost and in overall health of our nation. Also it is a problem inside of our church, people are not physically able to serve God if they are called they have no energy or motivation because we are so unhealthy, or busy, or stressed out or whatever excuse they use but they are all tied back to priorities in our lives and our health is usually at the bottom the list.

1.   Diseases of Heart 28.5%

2.   Malignant Neoplasms (cancer) 22.8%

3.   Cerebrovascular Diseases (stroke) 6.7%

4.   Chronic Lower Respiratory Diseases 5.1%

5.   Accidents 4.4%

6.   Diabetes Mellitus 3.0%

7.   Influenza and Pneumonia 2.7%

8.   Alzheimer's Disease 2.4%

9.   Nephritis, Nephrotic Syndrome and Nephrosis (kidney diseases) 1.7%

10.     Septicemia (blood poisoning) 1.4

Is this information surprising to you? Maybe a little but most of us can just look around or look in the mirror and realize at some point something went wrong, we have more gyms and exercise programs than ever. We have more free time and resources than any time in history to pursue  a healthy lifestyle, and as Americans our food budget , which is around 10% of our total budget for a household is the cheapest of any nation. So while we make many excuses for our current situation personally and as a collective nation we have to look at things honestly and begin to realize it's a choice. What we put on our plates and our kids plates and into our mouths is a choice, if we find time to work out or exercise that's a choice, its begins with an honest assessment of how we spend our time and why we eat the things we do.

As the Church in America we tend to focus on spiritual health and emotional health, but we hear little to nothing about physical health. Why is that? maybe it's because so many of us are unhealthy or overweight or maybe we think the church's role is not healthcare or maybe we think we shouldn't focus on the exterior.,

Just  look at your prayer request list. What is on it ? HEALTH, that's it, the number one thing on there is physical problems, why is that? Well for one it's a whole lot less embarrassing  to pray for Grandma who has diabetes or Dad who had a heart attack which are external things. Most of the things we pray for are only symptoms of the real problem, being overweight or unhealthy are not the problem they are only symptoms. So many times, and this is in all areas of life, we want God to change the consequences to our behavior and we fail to let the Great Physician come in and cut out the root of the problem, to do surgery on our bodies, what we really want is just a band-aid stuck on top of the problem so we can continue to do what we want and feel good about it.

 Are you addicted? Do you feel like you are in control of your diet or is there a constant battle between what you want to eat and what you actually eat? Are you always on a diet, or looking for some exercise program or book to cure your battle with food?  As we begin to explore the root of these problems and behaviors God is going to challenge you in a whole new way, to truly gain a biblical perspective of Gods purpose for food and diet, you will have to be more honest and open than you may have ever been, you will be held accountable and encouraged in a whole new way. 

Over the next 7 weeks we will search the Word of God and begin to realize his plan for us and also the importance he places on our health and wellness. Today you have an opportunity to change your life and your families lives  forever, you will be provided with the tools, knowledge, encouragement, and support that you need to make it through what are bound to be some tough weeks and some falling and getting back up, but we are here for you, not only are we here for you we are here because God called us for this mission we believe that he has put us in this place and this time to help you and will are willing to do whatever it takes for you to walk in the freedom from sickness and addiction that so many are trapped by today.

Week 1,  THINK. In the first week of study and movement we are going to challenge your mind and body, we first want to challenge the way you think. All change begins in the mind and that is where we are going to start. We will challenge what you have been taught about food, exercise, and the way we live our lives. We will say things you may disagree with or think that are impossible for you, but this week is the most important because if you will open your mind and throw away all the excuses that you have built a lifetime perfecting, you will succeed there is no doubt in my mind that following Truth will always lead to where we need to be.

Week 2, MOVE, Your body is designed to move(yes even your body), we are fearfully and wonderfully made and the human body is a wonderful thing, God designed us to be able to run, jump, push, pull, squat, lift and a million other awesome things, however we live in world that tries to force us to sit, stare, ride, and generally be inactive, we are going to change that as soon as possible by teaching you how we were designed to move and enjoy your physical body God has given us.

Week 3, EAT, God gave us some great things to eat and sustain ourselves with, we will learn how to eat and what to eat, not so we can lose 30lbs or run a marathon but so that our bodies can fight disease and heal themselves and so we can have energy and stamina. This week will be tough it will begin to expose your addictions and some of your unwillingness to change, but we will push through and you will realize why we should have control over what we put in our mouth.

Week 4, REST, God designed us to spend over a third of our day asleep and one day a week  resting, however we have pushed fast forward on our lives and live at a pace that is literally killing us. We will discover this week why you are always tired but can't sleep, why you have no energy but cant find time to rest, this week will test your priorities but if you can master the ability to rest and unplug and spend time with God it will change your life more than you ever imagined.

Week 5, FAMILY, our health and wellness is not confined to our own bodies but to others we have influence on, we regulate what our children watch and listen too but many never regulate what they put in their mouths, we will learn to how to make health and fitness something the whole family participates in and enjoys, as you begin to change your mind and body be ready because your influence on the people around you will be greatly increased. You will hold the key that so many people are searching for in the wrong places, and it will be awesome to change the future of your friends and family.

Week 6, Discipline and Self Control, and Fasting this battle is everyday, this struggle is with us all of life we not only have to learn the tools to improve our families lives, but also what to do when we fall down and make mistakes, this is where discipline and self control becomes so important. This week will be spent learning the importance of self control and how this not only affects our health and wellness but also every aspect of our life.

Week 7, conclusion, Q &A, practical application, final asessment . Paleo meal together, discussion etc..

Is CrossFit to expensive? (or is it to cheap?)

 When most of us pay our monthly dues at CrossFit, we don't think much about it we realize the value of what we receive in return for this investment to be a great deal. However when we talk to friends or family about CrossFit one of the first questions that comes up is. "How much does it cost to join your gym"?. And when we respond with one hundred dollars a month or one hundred and fifty dollars a month or sometimes greater we all know what the response is, well I can join the gym down the road for twenty five bucks a month and it is open twenty four hours a day.While that may be true, the value or the return on that investment, is very low. We all know tons of people that have been members of a gym for years and years with no change so essentially they are paying three or four hundred dollars or more a year just to say they are a member of a gym and they receive nothing in return. ie coaching, community, results.

What if you paid what you wanted to be a member of your CrossFit affiliate? What if it was like church and they recommended ten percent of income based on biblical principals but you could essentially join the church become a member and participate in the service for free. Who do you think gets more out of church? The people who tithe and are invested or the free riders? The truth is the way we spend our time and money tells a great deal about who we are and what we place value on, and the more invested and involved you are the more you receive in return be it in CrossFit, our relationship with God, our work, family or whatever we choose to invest our resources into.

So the next time someone complains about the cost of being part of this great community,ask them," what is your health worth to you"? For most people the answer is the same as what is your relationship with God worth to you. The words coming out of their mouths may say that they place high value on both of those things, but when we dig a little deeper we realize that based on the way they spend their time and money they place little to no priority in those areas of life. Instead they and all of us a times spend our time and money and things that have no value like TV, clothes, cars and houses. 

Today choose to make investments in things that matter, take a look at where the time and money in your life is spent and realize that the return on your investment is much greater when you spend it on things that truly matter.
